Abstract	1概况糖类与蛋白质和核酸并列为三大重要生命物质,是自然界中最丰富的生物资源;自然界中糖类主要以多糖的形式存在,如纤维素、甲壳素等,其他则以单糖和二糖的形式存在,包括葡萄糖、果糖和蔗糖等,此外还存在糖与蛋白质、脂质、核酸等生物分子以及其他小分子共价连结而形成的糖缀合物。将糖转化成与人类生活密切相关的产品是糖工程的主要研究内容。
