AbstractFresh cells of Saccharomyces cerevisiae were disrupted after 60 s microwave irradiation, and trehalase activity was simultaneously destroyed. Trehalose could be extracted from microwave-treated yeast by water in 10 min at room temperature.; Fresh cells of Saccharomyces cerevisiae were disrupted after 60 s microwave irradiation, and trehalase activity was simultaneously destroyed.
